Food for Thought Friday: cozy up with recipes for whatever mood you're in

Merry Christmas if you celebrate it! If you don't, happy last-Friday-of-2020!

I'm taking a break from writing new content for the next two weeks, but wanted to send some quick cooking inspiration in case you need it! Here are some ideas, depending what you're craving or what mood you're in:

  • If you still want cookies but not too heavy, try my Chewy Ginger Molasses cookies pictured above, recipe here. They are gluten free, dairy free, optionally vegan, and sweetened with molasses only! These are some almond-happy cookies with both almond flour AND almond butter, so really just nuts in cookie form! They also have many raving fans 😁.
  • If you want something slightly impressive/snacky/good for a group that's also green and flavorful and good for you, try my favorite broccoli/leek spread (you can also just roast + toss for a lazy version)!
  • If you're up for a time-consuming, comforting, GPJ-family-heirloom Italian cooking project, make Carne Sopresa, aka Italian pot roast with garlic/parsley "surprises" throughout, also affectionately known as my Nonna's "Surprise Meat"
  • If you want an easy-but-still-special dinner, try my Showstopper Stuffed Squash!

That's all I've got for ya today. Hope you and your loved ones are staying healthy, safe, and cozy these days, and hopefully getting some much needed winter rest.
